    Paneer Kofthas

    For the past one week, it has been raining occasional festive recipes on this blog. So for the last two days under the Occasions theme for this BM, it is going to be party food. In a social gathering inevitably there will be many kinds of people, which means varied taste and preference. So as a hostess it is easy to think of something that is appealing to many. Paneer is one such hit in all the parties. Paneer Koftha - Crunchy on the outside and soft on the inside. These can be served as such as a starter or you can dunk them in gravies and make a side. This is one of the recipes that does not require much time. Once you prep up, its just mixing and frying.

    Paneer Koftha, starters, appetizers

    Maangai Pachidi PANEER KOFTHA
    Paneer Koftha - Crunchy soft spicy bites.Perfect for Parties.
    Prep time: 5 mins | Cook time: Under 15 Mins | Total time: ~20 min | Serves: 16-18 no's

    Ingredients

    • 1 Cup Crumbled paneer
    • 2 medium sized Potatoes, boiled
    • 1 medium sized Onions, Sliced
    • 2 cloves Garlic, minced
    • ½" piece Ginger, finely grated
    • 2-3 no's Green chillies, finely chopped
    • 10-12 no's broken cashews
    • ½ tsp Cumin Powder
    • ½ tsp Coriander Powder
    • 2 Tbsp Rice Flour (optional)
    • Few Coriander leaves, finely chopped
    Instructions

    1. Mix all the ingredients in a bowl. Knead it into a dough consistency. Divide them into equal sized balls. 
    2. Deep fry them and serve them hot with mint chutney. 
    Serving
    1. You can serve them with ketchup/sauce or any chutney variety. 

    Notes

    1. If you feel that either the balls break when you deep fry them or they do not hold together while kneading and rolling into balls, try adding some more mashed potatoes. Potatoes help in binding the mixture together. Even if the paneer quantity is high, it might not bind well and break while frying.
    2. Rice flour helps to get a crispy kofthas. But they are not a mandatory ingredient. Even without them, these will be crispy.
