    Coconut Milk Pulav

    For the final day, it is Coconut milk Pulav. A simple basmati rice dish when paired with a delicious curry, it is a treat!! Pulav in general is everyone's favourite and even am addicted to it for various reasons. The ease of cooking is the primary one; adding everything in one pot and letting the flame do its work. Being a true South Indian, am fond of rice.  So on my usual weekend menu hunt, I found this simple one pot meal in Tarla Dalals site. 
    Coconut MIlk Pulav

    With an extra curry and some rotis and raitas on the side, weekend dinner is ready in no time.

    Mamidikaya Pappu | Mango Dal | Mangai Paruppu

    Coconut Milk Pulav

    Basmati Rice cooked in coconut milk and mild spices.

    Prep Time: 10 Mins | Cook Time: 15 Mins | Total Time: 25 Mins | Serves: 4

    Ingredients

    • 1 Cup Basmati Rice
    • ¾ Cup Coconut Milk
    • 1 teaspoon Butter
    • 1 teaspoon Oil
    • 1 Medium sized Onions, finely chopped
    • 2 Medium sized carrots, chopped
    • 1 Medium sized Potato, chopped
    • ½ Cup Green peas, cooked or frozen
    • 2 Cloves
    • 1 Cardamom
    • 1 Bay leaf
    • ½" Cinnamon stick
    • 1.5 Cups Water
    • Roasted cashews
    • Coriander leaves
    Instructions

    1. Heat the butter and oil in a pressure cooker, add the onion, cloves, cinnamon and cardamom and sauté on a medium flame for 1 minute.
    2. Add the green peas and carrot and sauté on a medium flame for 1 minute.
    3. Add the rice, coconut milk, water and salt, mix well and pressure cook for 2 whistles. Allow the steam to escape before opening.
    4. Fluff it with fork, garnish it with coriander leaves and cashew nuts.

        i think I missed this series.. I made a similar one sometime ago and we loved the nutty flavour from the coconut a lot 🙂
