So for today's seasonal post it is one more spring recipe. Carrots generally are copious during late fall into the winter. But the tender and thin variety that the farmers generally pull from fields to thin the rows are available during spring and summer. Nothing celebrates the season like a crunchy, colorful menu full of fresh produce - Carrot Mint Salad.
When it comes to eating, each and every one has something to say. Some even take pride in preaching this to others. Out of the so many free advises, seasonal cooking is the only thing that I (try to) pay attention to. There are so many benefits on following seasonal cooking. Apart from being cheap, it is in its best shape and form; appears very fresh and there is a significant difference in taste. I have noticed this at-least in some of the veggies. For example the carrots that we get in India during winter, commonly known as Delhi carrot is the supreme choice for making carrot halwa. There are so many recipes apt for each and every time. So nowadays I try to incorporate this as much as possible.
