    Brussels sprouts with kidney beans

    This is one veggie that is not often cooked at home rather never cooked at all. But after tasting it once, this has become a frequent guest at the table.  Indian style Brussels dry curry with rajma.  This is a very interesting vegetable that can be easily adapted to the Indian way of cooking. This can be had plainly as a salad or with rice as a side. They are abundant during the spring. Brussels sprouts just like broccoli has a potent anticancer properties. It is also a source of indole 3 carbinol, a chemical thats boosts DNA repair. A hearty and a very healthy dish.

    Mint, rice, pudinaBRUSSELS SPROUTS WITH RED KIDNEY BEANS - INDIAN DRY SIDES

    Brussels pan seared with Rajma, cooked the Indian way.

    Prep time: 2 mins | Cook time: 10 Mins | Total time: Under 15 mins
    Serves: 1

    Ingredients

    • 10 Oz (~280 gms) Brussels Sprouts, halved or quartered
    • ¾ Cup Cooked kidney beans / Rajma
    • Juice of ½ lemon
    For Tempering
    • 1 Tbsp Oil
    • 1 tsp Mustard seeds
    • 2 tsp Split Urad Dahl
    • 2-3 no's Red Chillies
    • ½ tsp Asafoetida
    • 1 tsp Cumin powder
    Instructions

    1. Heat oil in a non stick pan over medium heat. Once it is hot, add mustard seeds and allow it to splutter. Once they crackle add the urad dahl, red chillies, asafoetida and cumin powder.
    2. Then add the Brussels sprouts and sprinkle some water. Cover and cook until they become tender for about 3-4 minutes. 
    3. Remove the lid and allow any excess water to evaporate and sear the sprouts a little. Finally add the cooked kidney beans and squeeze half of lemon juice.

      Brussel sprouts is not easily available here in India and if you do get it, it costs a bomb. I personally don't like its smell :D. Anyway, the saladish- side dish actually looks quite good!
