The clock struck 12 and the "Ball" has dropped, giving way to yet another colourful and a bright year. A new year with many, many promises & resolutions to do this and that, which we all  rather I know  is going to die in a week or two. :) Happy new year everyone. The Magic saucepan is all geared up with a new fresh start after a long year-end vacation. It is a year old now and it has got its own little space and a healthy dish to start with. Cold honey glazed radish salad.


Honey Mustard Radish Salad
Prep Time: 5 mins
Inactive Time: 10 mins


Ingredients
  • 2 Cups sliced Radish (1)
  • 1.5 Tbsp Honey
  • 2 tsp Dijon mustard
  • 1/4 cup sliced wine grape tomatoes
  • 1/4 cup roasted crushed peanuts(2)
  • 1 tsp finely chopped green chillies, optional 
  • Salt, to taste
  • Pepper, to taste
Instructions
  1. Combine the rest of the ingredients in a bowl and prepare the dressing. Keep it in the refrigerator long enough to chill it. 
  2. Wash and peel the skin off the radish. Trim both the ends and slice the radish into thin strip ribbons using a vegetable peeler. 
  3. Before serving, pour the dressing over the radish; mix it well and serve.
Note
  1. I used the daikon radish in this recipe. You can also use the normal radishes. If you are using the smaller ones, slice them thin. You can also add carrots along with this. 
  2. You can also use the honey glazed nuts (almonds, peanuts, pine nuts etc..). If you are using them, reduce the amount of honey used. 
  3. Green chillies are purely optional. We like the heat it gives and if you are not used to, discard it.
